Juan Carlos Escalante Martinez, graduated in 1995 from the "Universidad
Iberoamericana" as an Executive Chef, and looking to expand his
knowledge, took masters course in New York, looking further to reaffirm
those experiences, was part of the team of the best gastronomical
institutions and restaurants of Spain. This gave him the confidence
of knowing how to fuse different styles of food preparation and
he was able to see the very demanding personal pride it took to
satisfy customers with the international scope. Juan Carlos decided
it was the time to return to his country to offer the skills that
he had learned .
His ability to know how to combine different flavors and the creativity
in presenting those dishes has enabled him to serve the most exclusive
hotels and restaurants such as "Camino Real" in Mexico City Cancún
y Acapulco, as well as the "La Puertecita" boutique hotel in San
Miguel de Allende, the major tourist destinations in Mexico.
Sensing that San Miguel de Allende was one of the most important
international destinations Juan Carlos decided that it was there
that he would open his restaruant and show what he had learned in
his profession
It is here that the idea for "Restaurante Nirvana" on Hernández
Macías 56-A, was first founded. It was a small location but with
a minimalist ambiance, excellent menu, personal attention and with
the finest international and national wines, not to mention the
vajilla whose designs were a true work of art created exclusively
for "Restaurante Nirvana" by Mara an artist taught at the school
of the well known muralist and artist Alfredo Zalce from Michoacan.
Because of all of this in a short time it became a place that one
had to visit.
In this space with the help of his lovely young wife Ana Laura
Gallardo López also with great knowledge of the restaurant business
that they made "Restaurante Nirvana" one of the best in the entire
region.
Now they are eager to please you at the new larger and more comfortable
space located inside the patio of Hotel Casa Linda and just in front
of the Angela Peralta Theater in the heard of the city.
Decorated with the same refined taste in the minimalist vane with
details of Mexico. Some of our Finest Specialties include:Quesadillas
de Flor de Jamaica (hibiscus fower quesadillas Tai Soup Venison
in Dark Chili sauce Shrimp Shish-Kabobs and many other fine dishes.
